Globally, kitchen enthusiasts frequently attempt to turn a simple bag of potatoes into a satisfying evening meal. My own kitchen experiments could result in a spicy Sri Lankan potato curry, a flavorful Gujarati version, or even a slow-cooked Spanish tortilla for a cozy occasion. This time, however, the answer comes from Greece. Yahni refers to a traditional Greek preparation technique: vegetables braised liberally in olive oil and tomatoes until deliciously soft. It’s as much a philosophy—it’s a endorsement of the simple, the patient, and the profoundly good (and yes, it doubles as a superb dinner).
Dish this up with crusty bread or Greek pitas for a hearty meal. It also works wonderfully with a assortment of mezze or even topped with a sunny-side-up egg for a surprisingly good breakfast.

Place five tablespoons of olive oil in a capacious casserole dish that has a fitting lid. Set it over a moderately high heat. Once the oil is heated, add the onion slices and a teaspoon of salt. Sauté, giving it an occasional stir, for about 10 minutes, until the onion is yielding enough to yield to a wooden spoon.
Stir in the minced garlic and cook for a further two minutes, while stirring. Then, toss in the potato wedges and oregano, tossing until they are well coated in the oil. Mix in the tomato puree and cook for one minute. Pour in the chopped tomatoes along with 400ml of water. Bring to a boil, then cover it, lower the heat to a gentle simmer, and leave to cook for 20 minutes.
Meanwhile, prepare the whipped feta. In a small bowl with a hand blender, process the feta, Greek yoghurt, lemon zest and juice, three tablespoons of olive oil, and a big pinch or two of salt until the mixture is luxuriously creamy.
Mix the pitted kalamata olives into the potato stew. Let it cook without the lid for a further 15-20 minutes, until the potatoes are easily pierced with a knife and the sauce has reduced to a rich consistency.
Ladle the warm yahni into serving dishes. Top each with a healthy dollop of the whipped feta and a light sprinkling of dried oregano.
